Cooking at the campground doesn’t have to be a task to dread! My name is Kate and I’m a veteran camper of 20+ years. My family is always on the go, so having easy camping recipes is a necessity! Today, I’m going to share some of our go-to meals that are quick, easy, and delicious! All you’ll need are a few simple ingredients and a campfire!
1. Eggs in a Basket
I make this almost every morning at home, but it’s just as easy to pull of at the campground. All you need is a skillet and a hot fire.
Ingredients: 4 Eggs, 4 slices of bread, butter, jelly or salt and pepper
Feeds: 4, but very easy to scale
Instructions:
Heat your pan with a tbsp of butter. Tear a hole in the center of your slices of bread just big enough for the size of an egg yolk (about 2″ across). Place the bread in the hot skillet and crack your egg in the whole. Flip once the bread begins to brown and cook until egg is done. Then top with jelly, or salt and pepper, and enjoy!
2. Campfire Sandwiches
Ingredients: Lunch meat, french bread, mayo, mustard, lettuce, tomatoes, cheese
Instructions:
This is a super simple recipe that is an easy way to amp up regular deli sandwiches. Slice the french bread, lightly coat both sides of the slices in mayonnaise or butter, add your favorite cheese, and place in a skillet to toast. Remove when the cheese begins to melt.
Meanwhile, saute your choice of deli meats in another skillet with your choice of seasonings and top your cheesy bread with the meats and veggies of your choice.
3. Walking Tacos
Ingredients: Ground beef, shredded Colby Jack cheese, shredded lettuce, diced tomatoes, black beans, taco seasoning, snack bag of chips of your choice
Instructions:
In your skillet grill the meat until golden brown, then add the taco seasoning. Rinse and heat the black beans, add a touch of taco seasoning to these, for an extra kick. The rest is simple! Choose your favorite kind of chips and add the taco meat, beans, cheese, lettuce, and tomatoes. There’s no need to dirty plates with this meal, just add the ingredients to the chips while in the bag and eat with a fork.

If you hate cleaning up after the mess of s’mores, this is the recipe for you! Just take a bag of teddy grahams, sprinkle in some chocolate chips, heat your marshmallows normally and add that gooey goodness to the bag. The kids will love these easy-to-eat treats and you’ll be glad for the no-mess clean-up!
