- 2 lbs of beef skirt steak
- 12 oz beer, your choice
- 1/4 cup lime juice
- 3 TBSP olive oil
- 8 green onions
- 1-1/4 teaspoons salt, divided
- 3/4 teaspoon pepper, divided
- Corn tortillas
- Minced fresh cilantro
- 1 whole lime
Instructions:
- Using a meat mallet, tenderize the steaks thoroughly.
- In a large bowl, combine the beer, lime juice, and 2 TBSP oil.
- Add steaks, turning to coat completely and refrigerator for an hour.
- Wash the onions and dry with a paper towel.
- Chop the whites off and leave the greens whole. Drizzle with oil and season with salt and pepper.
- Heat your grill to a medium heat.
- Once the meat has set, drain and discard the marinade. Season the steaks with salt and pepper.
- Using a paper towel coated in oil and a pair of tongs, grease the grill rack before adding the steaks and onions to the grill.
- Cover and cook to desired doneness. 2-4 minutes per side for both the steaks and the onions is ideal for medium-rare steaks.
- Remove the steak from the heat and slice into strips.
- Serve on a corn tortilla, topped with grilled onions, shredded cilantro, and lime wedges.
